The climatic conditions as well as 3 different breeds of goats is the key to the success of gourmet cheese production. All the cheeses are homemade or based on antique cheese making traditions.

It varies from very fresh and soft cheeses to cured and strong flavoured cheeses. There are 3 main types of cheeses you must learn – fresco/tierno (fresh), semicurado (semi-cured) and curado (cured).

QUESO FRESCO/TIERNO

The fresh cheeses are being cured only 7-35 days, are white, made from fresh or pasteurized goat, sheep, cow milk or the mix of those three. Might be natural or smoked. The flavour is very soft, with a sour touch, fresh and lightly salty. Perfect for the salads or serving with sweet marmalade.

QUESO SEMICURADO

This cheese are being cured more than 35 days, that is why has a totally different, stronger flavour.

Most of them have the ivory white color, might be covered with red paprika, toasted corn flour (gofio) or olive oil on which its aroma depends. The flavour is creamy, salty, slightly hot, less acid than the fresh one.

QUESO CURADO

Queso curado needs at least one year until it is cured to obtain great and strong flavors.

Original cured cheese must be made of a mix of various breeds of goat milk. Perfect to accompany dry wines due to its strong taste.

WHICH CHEESE BRANDS TO SELECT?

All the canarian cheeses are truly delightful! The most recognized and easily found in supermarkets are – Valsequillo (from Gran Canaria), Maxorata (Fuerteventura), Herreño (Hierro).
